Cacao refers to the whole beans, or the powder of the bean if it has not been heated during its processing. The Theobroma Cacao tree is a small evergreen tree which is part of the Malvaceae family, also known as the mallows. It is native to tropical areas of the Americas but is now more specifically grown in areas of West Africa. The tree produces large pods, which is where the cacao beans are housed. The cacao bean itself is coated in a thin, white membrane, which wears away during the drying process, so that the cacao bean is eventually a brown- or reddish colour by the time that it is ready to be ground into a powder.
